Mojito's are easy--life decisions are not. Glad and understand that it takes at least the summertime to work through. You're too strong a woman to settle for anything that doesn't make you happy, and too smart a woman to think that happiness is a 24/7 guarentee. If it weren't for valleys we wouldn't appreciate the mountain tops. I heard tell of a man once that was in very, very deep depression in his life. He met a friend that had just spent a year recovering from the same. The depressed man says he felt like he was in a very, very deep hole. His buddy said to move over and he'd jump in next to him. When the first man says "I can't ask you to do that"...the second says "It's okay--I've been there before and now I know the way out."

ANYWAY--Mojitos
first make a simple syrup---very easy...1 cup of water and 1 cup of sugar. Combine and melt the sugar in the water over heat. Once dissolved, add the rind of 2 limes and a dozen pieces of torn mint. Cover and let steep for about 30 minutes.
Next--in a pitcher (or glass) combine crushed ice and pieces of cut up lime. Use a "moddler" (anything that will reach the bottom and allow you to smush up the ice and the lime). That releases the lime juice and the oils from the skin. Then add fresh lime juice -- how much depends on if you're making a pitcher or a glass...(either 1 cup or a couple of tablespoons). Pour in some white rum (again--how much is up to you) and then add some of the syrup and a splash of club soda.
Pour all of the goodness you've just concocted into a tall glass filled with crushed ice. Top with a lime piece and some fresh mint and if you are really daring--stick a piece of sugar cane in there to gnaw on and enjoy while you're relaxing.
