Oh yeah, I have a recipe similar to ScottMom's and it's so yummy this time of year! It's warm, cheesy, melty..... A good dinner rolls sops up the cheesy sauce. Maybe we'll have this for dinner next week.
Chicken Casserole
1 Whole Chicken
1 can Cream of Chicken Soup
1 can Cream of Mushroom Soup
1 box Velveeta Cheese, cubed (med size box)
1 can PET Evaporated Milk (small can)
1 can Chow Mein Noodles (small can)
Crushed Potato Chips about 1 or 2 cups to taste)
-Boil chicken, remove skin and bones, shred
-Combine all ingredients (except potato chips) in casserole dish
-Cover with crushed potato chips
-Bake at 350 about 30-45 minutes or until cheese is melted, dish is heated through and top is browned
-Serve with biscuits, crescent rolls, dinner rolls or other bread of choice
Some recipe notes:
-I prefer using skinless, boneless chicken breasts
-Trust me - PET evaporated milk and Eagle Brand sweetened condensed milk are not interchangeable
- I like to bake mine in a 13x9 pan so you get more of the crusty topping - but a bowl type dish works fine too
