We contacted the local animal shelter and asked what we could do to help.  Turns out they were in great need of feral cat houses! So, we asked for supplies to be donated and set up a cat house table at the next event.  Took pictures of families working together to create the houses and submitted it to Disney! Not sure yet if it will be approved, but we're hopeful!

In April 2018 our pto held its annual carnival and silent auction.  It takes over 40 volunteers to pull off the carnival- set up, run games, and clean up.  We used 5th graders on up through adults.  Prior to the event I registered with Points of Light, got approval.  I took photos at the event to document that it did indeed happen and we had a variety of ages involved.  In June we received 10 park hopper passes that we'll put on the April 2019 silent auction, they expire in June 2020- two years from the date they are issued.  For the photos I made sure the kids i took pics of were the children of our actively involved parents so it was easy for me to verbally get parent permission for their image to be used.  I know the school has photo permission slips on file but just grabbing parents I knew was easier.  I think the photos are really just for POL to verify that we held the event and not for publicity.
So, essentially I use a project that we already conduct and documented how we use volunteers.

Other activities I thought about documenting include if you have a school supply drive in August then fill backpacks for kids in need,

We organize and host a community fair on the night of the Back to School Open House- takes 4 volunteers a few hours to invite 15 community groups into the commons where they set up a display, we host for 3 hours then clean up.  Groups include youth football signup, cub scouts, girl scouts, local dentist, doctor, public library, athletic booster club....groups that recruit students/parents.

We host a Welcome Back to School event at the first home football game where we give away freezer pops and beads in our school colors, it's also a way to recruit parents to sign out volunteer sheets.  this year we had 5 adults and 3 children for 4 hrs.
Good luck
