If the concession stand is open during the warm weather I would suggest lemon shakes and packaged ice cream. Another idea instead of your organization paying for a food item, get the parents involved by letting them donate a special food or treat. Since the food item was donated your organization will receive 100% profit on that item.
Or even see if a local bakery or candy store can donate some special treats for you. Tell the businesses they would get free advertising if they would make a donation. This is what I did, since I own a business, I donated chocolate covered Oreo cookies with my business name and information.

Has anyone tried fried candy bars yet? Stick a skewer in them, freeze them overnight, dip them in a simple batter, fry (still frozen) until golden. When you bite into them the insides are all nice and melty.
I haven't tried it yet so I don't have a price range down, but I'll be doing it ASAP.
I like the baked potato idea and if you are already selling nachos or tacos, people could add some fo those same toppings to a potato. We sell tacos 3 for $1.75 at the school picnic and there is always a line...even with the canned diced tomatoes.
Can you sell beer? We always make a killing on beer.
