We do a walk-a-thon in September. The kids love it and parents love that all of the money goes to the school, not to a fundraising company. It's easy to put on, low overhead, and gets the kids outside.

I love the idea of a Walk-a-Thon and we'll most likely do this in the Spring. Do you have any contact info for the salsa fundraising? I think something like this in the fall before the Holidays would go over pretty well.
Yes, walk-a-thons (and jog-a-thons) are really popular. There are also other acitivty-based events that incorporate other athletics or such things as completely an obstacle course, etc.. Typically, these are structured so people pledge that participants will do a certain amount. Then, there are also read-a-thons, quiz bowls, trivia bees, spelling bees if you are looking for something a little more low-key.
I'm looking for some other healthy fundraising ideas. Right now we're doing a salsa fundraiser with Casa De Jorge Salsa's and the response to offering a healthy product is overwhelming.
I'd like to keep this trend going, any suggestions?
