Wow! I was right where you are one year ago. You Go Girl. Our school hosted a "Bonanaza" the first time ever last April 29th. It was a huge success. We are a little private school and our student body is only 185. We raised 14,000.00 after expenses.. In March I would have been happy to just break even! We served food, which we had catered in and we planned for food for 300 people..
There are all kinds of web sites that will help you with this. Our booths were silly and in hind site what made us the money were the Dunk tank, face painting, Cake booth (ok, I will brag here) Ours was Awesome " the O Cake Corral" Amazing profit! have you considered a cake walk? our kids loved it. parents donate cakes, cookies and cupcakes. you put 10 circles on the floor and carnival participants walk around the circle to music. when music stops participants land on the nearest circle. you have a hat with numbers 1-10 on it. you pull a number. whoever is on that number wins a cake of their choice.
