Our former Music Director (whom I miss!) recorded the students the week before their performances and sold the CDs at the concert. The tie for the best sellers go to the Senior Class DVD and the Kindergarten class CD and DVD! He only charged $10!
Did your students perform their own original songs or did they sing current popular songs? If the latter...did the company you used only allow you to sing certain songs? I'm just really curious how you all got around copyright issues. Singing arrangements that belong to someone else (even a karaoke disc) totally violates copyright laws if you record music then sell for a profit. I'd love to do this for our music department - but am curious how you made it legal.

At our school we record our students and each one designs their own cover. When the CDs are ready, we have a CD release party at our school concert. Our kids are from k-8. We have 160 families and we have parents bring in a dessert. The PTO orders pizza and soda and it is a fun time. Our project is on www.shareavoice.com
This is our second year and we already sold around 400 this year and made around $2,500. It is a good way to show off your school.
