Beignets - I started last year with parents bringing in donations for breakfast. It went over really well. That was the first time anyone ever did that at the school. Old philosophy was "write a check". Our board tries to be very cost efficient.

Thanks everyone for the ideas. I love the one with the frozen yogurt but that one won't keep for the entire lunch period (staggered lunches from 11-1). I'll probably go with the pudding one and go online and find a couple more, I can share with others.

Unfortunately, I won't be there to make sure our secretary friend doesn't cheat. We aren't allowed in while the teachers/staff are lunching. That's their turf and time and we are considered to be intruding. We drop it off, set it up and return 3 hours later to clean it up. It's a thankless job but it's what we signed up for.

I attended my WW meeting this morning and was reminded of a recipe that is only 4 points for the entire dessert.
And it is great.

3 cups sliced fresh strawberries
1 4 serving pkg of FF SF Vanilla Pudding (not instant!!)
1 4 serving pkg of FF SF Strawberry Jello

Slice strawberries and place in a pie pan sprayed with Pam.
Cook the vanilla pudding with 2 cups water instead of milk.
Add strawberry jello powder to pudding.
Stir and pour over strawberries.
Chill.
Serve.
FF SF whipped topping (Aldi is awesome, Fit and Active) is a great way to top it off.

Don't forget the veggie platter too. Low cal dip too.

You all still BAKE at your school? thats so nice to hear. no one seems to have time to do that anymore, its always the box of cupcakes form the supermarket at our school, for staff lunches, or those cookie boxes, etc.

WOW our staff would be SO appreciatiove of home baked goodies at an appreciation day,and yes, many have special dietary needs for medical or diet reasons, but still NEVER would tell us what to bring or not bring.

if you try to please all, you will end up pleasing none. i would just bring th usual, and if there are left overs, i am sure the custodial staff or others, will be glad to finsh up the crumbs

First, just because they are doing Weight Watchers does not mean they aren't wanting to get those homemade treats, and second, why make the rest of the staff "suffer" through because a select few choose to diet. Did I mention that my mother-in-law has been on Weight Watchers for 9 years and refuses to let people have what they want for birthday desert at her house even though she insists on having parties for everyone. Yes, it drives me nuts, so provide some fruit, etc and maybe consider making a few things with Splenda ( www.food.com for recipes) and offer a bit of compromise, if it suits you. Believe it or not, I was catering 2 staff lunches a year and someone had the nerve to ask me not to serve meat (not just offer an alternative) because they were a vegetarian. It's not like you are shoving the food in their mouths anyway. (Can you tell this is a sensetive spot with me!?!)

Frozen Strawberry Layer Cake
Makes 12 servings POINTS® value per serving: 4
Ingredients
1 1/2 pounds strawberries, hulled and sliced (about 6 cups)
1/2 cup sugar
2 Tbsp lemon juice
1/2 tsp salt
1 12-oz store-bought, fat-free angel food cake, cut into 1/4-inch slices
1 quart store-bought, fat-free frozen vanilla yogurt
Instructions
To make strawberry sauce, combine strawberries, sugar, lemon juice and salt in a saucepan, stirring over medium heat until the sugar melts and the liquid comes to a simmer. Simmer 15 minutes. Use the back of a wooden spoon to mash about half the berries against the side of the pan. Cool to room temperature and use immediately or refrigerate, covered, up to 2 days.
Spoon the frozen yogurt into a large bowl and mash it with the back of a wooden spoon until soft and spreadable.
Line the bottom of a 9-inch round springform pan with one third of the cake slices, cutting any slices to fit the shape of the pan. Top with half the frozen yogurt, spreading it to the sides. Spread 2/3 cup strawberry sauce over the frozen yogurt, then top with half the remaining cake slices, again cutting any to fit. Spread the remainder of the frozen yogurt over the cake, top with 2/3 cup strawberry sauce, and finally seal the top with the remaining cake slices. Cover with plastic wrap and freeze at least 6 hours or up to 3 days. Let the cake stand at room temperature 10 minutes before unmolding and serving.

It is frustrating to get those sarcastic comments.. you can kill her with kindness... :) but just be sure when the luncheon comes along, you hover over the dessert table, and be sure to point her in the direction of the labeled WW desserts.. and don't let her have the ooey-gooey chocolaty ones :) ............

ditto.... fruits of the season. strawberries and a banana bunch. if you make a recipe, put out a sign: this recipe is brought to you by Weight Watchers.

I have lots of people that are diabetic or vegetarians so I try to accomodate their dietary needs.

I know it's hard to smile when someone criticizes a good deed or kind gesture. My mother always say kill them with kindness to which I say to my mother: mom, if I kill them with any more kindness, they'd already be dead!
