Maybe suggest a few ideas and see what the majority prefers at the meeting. Also ask the principal to form a committee so you could work with the teachers.
For us we have all our fundraisers/events on the school calendar so they know everything that is coming up before school even starts. Ice Cream Social, Santa Shop, Chinese Auction, fundraisers everything is on the District School Calendar.
(just an idea for next year) The president plans it then goes over it with the principal.

I have not encountered this problem as of yet, but I would go meet with her and explain that it is highly difficult to help the school without a team process between the school and the PTO.
If that failed, I would request to attend the next staff meeting so that you can share what your PTO's plans are, and then inform her, in front of all the other teachers, what fundraiser you plan on doing.
Or you could plan a big fundraiser, like a carnival or an auction that would be too much for one class teacher to pull off.
i need help with our principal everytime we give an ideal about a fundraiser she gives it to the teachers . someone please tell us what we can do about it?
