A parish in my area does a variation of the Cow Plop called Cow Patty Bingo. It's part of a larger picnic/festival event.
It's been my experience that events make the best fundraisers, at least for our area. Things like Mouse Races or Chicken & Beer Dances. People like to be social, get out and have some fun and are happy to buy a ticket for a good time. Also, anything that attracts people from the community and not just the parents from your school. Summer here means all kinds of homecomings, parish picnics and street festivals and the chili cook-off. If you can get a booth to sell a food item, hot dogs, burgers brats, kabobs, tacos, soda, bottled water or beer, you'll be providing an item that people want and more importantly, it's great PR for your group or school.
We get tons of people who comment about how much fun our group is having and since we are a private school, that's worth more than any money we could spend on advertising.

Our soccer team in Arkansas just finished a fundraiser called Right Response and made over $1,500 with 18 players participating. Their was no minimum purchase, nothing to pay for ahead of time, the first aid product was a hit with parents, and we made 50% of everything we sold (the products sold for 10-25 dollars). It was refreshing to actually be selling something that people wanted.
The custom flip flops are doing well. Schools are earning thousands from this fundraiser. You can get more info from there website www.fundraisingva.com
The new thing around our area is custom flip flops. Schools tend to use their school colors and a basic font with their school's name or initials, you can also use a picture/symbol/mascot/logo - so long as it will fit on the strap. One of our local schools is on their second order and they're selling really well.
