Sesajune - I agree with the fall items such as pumkins, mums, indian corn. but don't forget to also have your school magnets, tshirts, umbrellas or whatever else you can have out there. It not only identifies who you are, but you may get more sales from that as well.
I don't know how crafty you all are, but I've seen at craft shows a wooden cross to make scarecrows, but at the top, they had around piece of wood with a face painted on it. All you had to do was stake it in your yard and add the clothing and stuffing. Just another idea.
I don't know when you are doing the booth...but I am with Home and Garden Party and this week only I have a HUGE canlde sale by the case...you end up paying about $4 per candle then sell for $9 making $5 ea!! If you want to go with food, how about cups of chili or vegetable soup and homemade pies. Is the festival near Halloween time? How about finding a local pumpkin farmer who will let you sell his pumpkins? You could add d's suggestion about mums and throw in some decorative gourds, etc....
