our bylaws state that no member may benefit from our net profits, what does this mean for PTO buying teachers Christmas/ end of year gifts? They are members and that seems to be a benefit??

That language about profits is standard for a nonprofit organization. It simply means that you won't distribute your cash profits to shareholders like for-profit companies do. Instead, you use your money to forward the mission of your organization. Buying small appreciation gifts for teachers, or volunteers for that matter, is perfectly acceptable.
