Also, that teacher's class will be realing for a while, so maybe offering to help out in the classroom would be a good idea. Certainly the parents who usually helped out will be upset and it would be nice for them to know someone is covering the class.
Our media specialist passed away last summer. We tossed around ideas of planting a tree in her honor, a nice bench, book plates, a plaque, etc.....

We always send a plant or flower arrangement to the family (for teachers and staff only). We have an account at a local floral shop. Last year was our worst year because there were so many deaths.

My condolences to you and your school. What a terrible loss. I think that coupling with the Principal to see what might be appropriate would be a good thing to do. If you work a separate support idea you may find you are stepping on their toes of the Administrators. If the teacher was married and had a family here, I might suggest meals to the family. If she has family elsewhere that may be coming into town, you may want to see what support you can offer as far as lodging arrangments, transportation etc. I suspect the school will plan some sort of a memorial service. You can offer to hold a small reception for adults attending at the conclusion of the ceremony and help with the details of the ceremony they hold.
Also-if there is the possibility of creating a small photo book or perhaps orchastrating letters of condolences from the school to the family--that would also be in very good taste and I'm sure a welcomed support to the family.

I became PTO president in October 2006. We have recently learned that one of our younger teachers unexpected passed away this weekend. We are a k-2 school of 700 students. How can/should the PTO assist in this situation?
