ElShaddai - Donuts with Dad is a fun event. Search the message boards using Donuts with Dad as the keywords to read about how groups run theirs. Silent auctions are great fundraisers but take lots of planning. I know they've been discussed here so also search using the keywords Silent Auction or Auction.

You could also have a science night- work with the Science teacher and come up with just a few experiements to show the kids... the cost is minimal and it ends up being a very fun night for all. Great family together time.
We held an arts and crafts night before Christmas but you could do one for Valentines Day. The person who chsired our event was awesome. She had about 10 crafts (we did 2 hours and had lots left so you could do fewer)to choose from at different tables (in the cafeteria)and we had Sants pics and cookies and cider. For Valentines you could have punch and heart shaped cookies (our refreshments were donated from a local church). Search the web for easy crafts and order some online thru oriental trading. Also you could still do pics, put up a pink or red tablecloth and take digital photos to print right there or hang up the next week to showcase the event. We also sent out RSVP forms to get an idea of attendence. Our night was a total blast!!
OR how about a 100 day celebration that evening? It is about that time of year. I know there are 100 day ideas on the web so you could give it a search for activities. You could rename your activities and refreshments with 100 themed names. Classrooms might be making 100 theme art projects you might be able to borrow for decorations!
How about a donuts with dads...easy and yet so satisfying...we're also doing a karate workshop. Got a local karate business to come in and give lessons for 'free' and then the graduation was at their dojo...great publicity for them and realitively low effort for us...we did use this as a fund raiser and charged 20 dollars for 3 weeks of 3 x a week after school 45 minute sessions. Very popular and everyone was happy. I'm sure the dojo got a least one new client so everyone profitted.

With the children off school on Feb 1 and 2, we are looking to do something on the night of January 31. We already have 2 Skating parties scheduled, a Math Night, a Movie Night and another Family Night that will be a laser show. Looking for very simple ideas that will not take long to organize.
