I posted your question in the PTO & PTA Leaders group and did get some responses on what folks do to celebrate American Education Week.
Here are some of the responses:
We are doing an assembly on the 18th and spirit days throughout the week
We do a meal -- sometimes lunch and other times breakfast treats, little gifts for staff, thank-you cards signed by students, posters outside and inside "Remember to thank your School Staff" and qualified parent volunteers helping give staff extra free time by helping with little tasks.
We coordinate a catered lunch for our staff at the end of that week. Our school hosts visiting days when parents can come in to observe their children's classes...
We're planning a food drive and possibly a staff appreciation treat/luncheon. Also, each staff member completed a Favorite Things sheet at our Back to School Luncheon that we'll encourage Room Moms and classes to use to purchase items for the staff.
Also, please join our Facebook group! It's a great place to get tips, ideas, advice, and support from other PTO and PTA leaders: www.facebook.com/groups/856881841090181/
