We have done several "Spring Fling" nights at our K-5 school that have been successful. We do a sock hop in the gym where a teacher runs the music and occasionally some classes will present an informal dance or short skit. At the same time we run a food court in the cafateria where families can get dinner for the evening. We purchase pizza, sandwiches, pop, juice, and ice cream and have a cotton candy and ice cone machine for the kids to run with adult supervision. The court is in one side and out only one end where the cashier is. We keep the charge easy, $2.oo for pizza or sand and chips. Drinks are .50 cents and the rest are eithor .50 or 75 cents. At the same time around the edge of the cafeteria we have a silent auction of baskets that the classes have put together with a theme. ie. bath basket, toy basket, summer fun basket, book basket. The marker/sticker basket was popular. We then have donations from the community that are also bid on in the silent auction. After the dance is over, we have a cut off time for the auction and announce the winners and collect the money. It does take time to set up, but we have school of about 465 kids and made about $3000.00.
The biggest benefit of the spring fling was the fact that we got the parents and community into the school building and had interaction between parents, kids, ptc, and the staff.
I's say "Go for it". You'll need about 20-25 volunteers to do it.

We generally hold some sort of big family activity for Spring. Carnivals are really popular, but they are a LOT of work and require multitudes of volunteers. Carnivals usually work best on Saturdays.
Last year we had a family night with a silent auction and Bingo. There were soft drinks and pizza for sale as refreshments. (Note, be careful on Bingo - there are lots of laws governing any type of Bingo game.)
This year, we'll be holding the Family night during the school book fair, but we haven't worked out the details yet.
