Maybe others will disagree, but I think of carnivals as being family-type events? We do a "gala" every spring that is an adults-only event and it usually raises alot ($45-$60K). We have a band, food, alcohol, a live auction and a silent auction. It takes alot of effort but it is well worth it.
There is a local Baptist school that does a Fall festival that serves as their fundraiser but it is a family event and they have lots of auction items. They can't serve alcohol which is why they use this format.
Anyway, just a few things to think on. Good luck!

In an effort to raise money for our Endowment Fund (to help others in need pay for tuition)ee are considering a Carnival themed event for a Fall Fundraiser. We would prefer this to be an adults only evening. Have any of you done anything like this and what type of "games", acutions etc. did you have? We are considering asking different groups within our school/parish to sponsor a themed room. We have kicked around the usual cake walk, bingo, etc. Any great ideas that have worked before.
Also, this will be the 50th anniversary of our school, we thought about tying in a Homecoming theme and invite back alums.
