With salmon no fishy smell; it's not like mackarel. I like the chef idea, as well as the lent one! 50 lbs of smoked salmon is a LOT, but if you had the crowd one idea to use some is to have a bagels and lox breakfast. Maybe you could sell it to a restaurant or bagel store?
These are great ideas. And the turkey pushing salmon - that's just funny. I have never done much with fish, so I really need these ideas. I know one person smokes fish. What do you do with smoked salmon beyond appetizers?
I do have one concern - if we cook it at the school, will there be an ever lingering fish smell?
lol ok here's another idea if you can't use the fish.......freeze it tell next lent and donate it to a local church. Then DEDUCT IT WOOOO!(can ya do that?)
I dunno if your area is big on fish or what not but you could do that potluck and take it a step further by doing a cook off (they could degut it themselves)and see if you can get someone like a chef from a local resturant, on the news here we have this guy named mr.chef who shows you a dish so some kind of local tv personality, and your principal could be the judges. To be in the contest they'd have to pay a certain fee and the winner could get a portion of that money....

You say the salmon is coming November. I can think of two things: 1) Something Fishy Here Thanksgiving Dinner. You could gear it like the Chik-Fil-A commercials, except instead of a cow pushing chicken, you could have a turkey hawking fish! Salmon is one of the most versatile as far as recipes go, and is so easy to cook. Everyone submits recipes and you have a potluck (with a contest for best, most original etcetera?). 2) I'm not sure how food banks are where you live, but around here they take just about anything--I know fish would be a big hit, especially a protein people normally can't afford, like salmon. The food banks in my area are equipped to accept things like chickens and turkeys, I don't see why they couldn't take fish.
