Like some of the ideas you suggested in your post! One idea is to do a whole school photo -- is there some way you could get a photographer to take photos from the roof and the whole school? Kids love that stuff! You could also try a school-wide assembly with some sort of entertainment -- any local performers that are really popular? Other alternatives are an outdoor picnic at the end of the school year for everyone. Serve ice cream or other special treats.
Good luck with this! Sounds like you have a great school!

We are currently planning for our fall Walkathon & we are trying to come up with a reward for the whole school if we meet our goal. We usually do something that involves our principal, but we would like to stay away from incentives that involve some sort of humiliation (for lack of a better term!). Our principal always dyes his hair the color of the winning grade's choice (avg donation per student). We also have rewards for individual student goals. What we are trying to come up with is an idea that brings the whole school together around something fun & celebratory. Last year, if our students met their school goal, they each got to put their paint hand print on the principal's truck. Over 550 hand prints on one truck was pretty impressive. The principal drove around all weekend like that, & was so proud of all the students hand prints.
Thanks in advance for any help or suggestions!
