Wow! What a painful experience. Did you tell her that her jokes and rude comments offended you? Some people just have a....different..kind of humor that's only humorous to them.
Check your by-laws about the resignation. Did you put in writing or just blurt it out in a moment of hurt and anger? That may make a difference. According to our by laws an officer is supposed to give 10 days written notice if they are going to resign, this rarely happens.
Another option since you can't totally avoid this person, and more than likely she offends other people, is to talk to your counselor about a Conflict Resolution Training. I've never been to one, but I know our sub teachers do this and probably our teachers too. This is just a few exercises conducted by a counselor or another quailified person that helps people get along with all types of personalities. Sounds like your prez needs a little heads up on being PC.
Does she make such slurs to the children about their religion or race? If so, I think you may need to talk to an administrator about it. It is bad enough she has such an attitude with adults, something should be done about that, but if she is acting this way toward children then something REALLY needs to be done.

Just yesterday I resigned as Corresponding Secretary (for our HSA). The only real conflict I encountered was the President of our organization. From "dirty joke" emails to off color comments about the fact that I'm Jewish, this woman is an absolute nightmare! The last straw was a call at 9:30pm on a Friday telling me to come to an "emergency meeting" Monday morning because I was "part of the problem". I'm pretty sure she's insane. I don't really think resigning was in the best interest of the HSA, but how do I reverse such a thing, if at all? And, more importantly, how do I deal with this woman? Sorry to ramble, but this has been an upsetting experience for me. I always believed in volunteerism, especially where my child's education is concerned.
