I have done different things. This year, I did a tote bag with all the thumb prints of the students on it, and it said we think you are better then two thumbs up!, photo album with the kids and then they can write a little something in it for the teacher, but if you get some money donations then I would check into seeing what her favorite perfume is,maybe, you could do a basket with different things she really likes in it. With maybe even a gift certificate to a resturaunt. That is great that you have donations sent in to do this! Hats off to you. And best wishes, hope is goes GREAT!
This year I made a gift for one of our teachers by putting a poem I found on this site on poster board and having all the children write their name on hand cutouts that were placed around the poem.
